Let’s Make Ground Bison Tacos

Happy National Bison Month! If you came here to get fancy, then you may be disappointed. But the thing I loveeee about cooking with bison, is it doesn’t have to be fancy. I have always thought of it as something I could only get if I go out to a place that serves bison or I have to indulge at a fancy dinner. I am here to set the record straight, that’ is’s just not the case.

Bison is widely available here in Colorado and is an amazing alternative to the beef we consume everyday! Bison meat is leaner than beef and has 25% fewer calories. It is so easy to use in so many dishes. It is also a very sustainable meat because rarely are bison given steroids or growth hormones and typically graze their whole lives. They also don’t over graze and they emit less greenhouse gasses than cattle. You can easily grab it at most local grocery stores, Sprouts of Whole Food! So let’s start the bison trend this July in celebration of #NationalBisonMonth!

GROUND BISON TACOS

  • 1lb ground bison
  • Taco seasoning (or your own choice of seasoning)
  • Pickled onions (red onion soaked overnight in red wine vinegar)
  • Queso Fresco or Cotija Cheese
  • Cilantro (but if you hate cilantro, parsley or green onion)
  • Chipolte Aioli (mayo + adobo pepps in your food processor or store bought)
  • Torillas of your choosing (I like the zero carb to make it an all around leaner meal)
  1. Cook and season the bison meat to your liking.
  2. Warm tortillas.
  3. Prepare toppings.
  4. Build your tacos with bison meat, chipolte aioli, pickles red onions, queso fresco cheese and then sprinkle with cilantro. (If you aren’t a cilantro girly like me you can double up on onions for the breath of champions, or use parsley to get that full spectrium of complimentary colors that make this such a pretty dish!
  5. EAT!
