PB Cookies… Easy as 1,2,3… Literally.

I wish that someone had shared this quick and easy recipe with me a long time ago.  Actually, I wish I never had any knowledge of it at all… oh how bittersweet.  Luckily, my good friend and father of two rambunctious two year old twins gave away this little cookie secret. (Thanks Brent Hedstrom!)

This recipe would have been perfect during the recent blizzard when I was stuck at home and had hardly any food in my pantry. There is something about snow days that bring out the baker in all of us. Well I am here to gift you with this delightful, quick and easy fix to all your bakey, sweet toothy problems. Everyone is sure to have these three ingredients laying around, so you will never have to be without cookies again!

Preheat oven to 350 degrees

Ingredients:

1 C Sugar

1 C Peanut Butter

1 Egg

Mix the three ingredients together, form little balls and place on a baking sheet.  Put them in the oven for 15 minutes. When done, let them cool for a couple minutes and dig in!


These are best when served hot (like any other cookie) and are even better paired with a glass of cold milk.
